For almost any paid session: the contract and the model release. Add the liability waiver if you shoot on location, outdoors, or anywhere with physical risk. The two spreadsheets are for the money side and can wait until you've got the paperwork sorted.
The business structure translates anywhere, but the legal language is written with US practice in mind. If you're elsewhere, use them as a starting point and have someone local check the wording before you rely on them.
